Cambodia’s food culture is deeply intertwined with the gifts of the land and the changing seasons. With its tropical climate, the country offers a vibrant array of fruits, vegetables, and fresh produce that varies throughout the year.
The Sweet Season with Mangoes and More
From April to September, Cambodia’s mango season really comes alive. The markets are brimming with a variety of mangoes, including the much-loved Svay Keo Lameat and the sought-after Svay Keo Chin, enjoyed whether they’re ripe or green. The top restaurants in Siem Reap showcase green mango in traditional salads like nhoam svay. It’s a sharp, refreshing dish that’s undeniably Khmer.
Mangosteen and Rambutan, the Jungle Gems
Between May and July, mangosteens are at their best, thick-skinned, juicy, and a lovely balance of sweet and tart. Rambutan soon follows, making its debut at street stalls from June onwards. At hotels like FCC Angkor Siem Reap, these seasonal fruits frequently grace desserts and fresh juice blends, celebrating the harvest in a stylish yet relaxed manner.
Year-Round Staples that are Papaya and Water Spinach
Some produce is available all year round and serves as the foundation of everyday Khmer cooking. Green papaya is a crucial ingredient in bok lahong, the much-loved Cambodian papaya salad, while water spinach is often stir-fried with garlic and chilli, making for a simple yet delicious side dish.
Jackfruit and Longan for the Rainy Season

You can find longan making its appearance from August to September, sweet and plentiful at local markets. Jackfruit, a favourite throughout the year, is savoured ripe as a snack and unripe in savoury curries and soups. During the rainy months, the markets come alive with a riot of colours, textures, and that fresh taste that makes Cambodian food so incredibly satisfying.
