How Dubai Is Reinventing Traditional Emirati Cuisine – From Desert Roots to Fine Dining
Dubai is known for its global menus, but there’s a quiet return to local roots. Traditional Emirati food is being reworked, refined and proudly served in new ways. From desert dishes once made over open fires to plates dressed with edible flowers, the shift is thoughtful, not flashy. And it’s bringing more people back to native flavours.
Al Harees Gets a Makeover
Al harees, a slow-cooked wheat and meat dish, has been a Ramadan favourite for generations. Now, chefs in fine dining spots like those at Anantara World Islands Dubai Resort are presenting it in smaller portions, with added texture and side pairings that give it new life without losing its soul.
Dining with a View and a Story
A handful of venues are now offering elevated Emirati meals with skyline settings. Some of the top Dubai restaurants with a view have introduced curated local menus that pair storytelling with each course. Expect grilled hammour, date chutneys, and spiced rice served with modern plating and a rich cultural context.
Sweet, But Not Overdone
Luquaimat, the deep-fried dough balls coated in date syrup, are now being infused with saffron creams or paired with flavoured ice cream. These desserts are popping up not only in local bakeries but also on tasting menus at new Emirati-inspired cafés across the city.
The Return of the Majlis

Some eateries are re-creating the majlis setting, where guests sit on cushions and share food over stories. This communal dining style encourages slower meals and deeper connections. It blends old traditions with Dubai’s growing focus on experience-led dining.
