The prime member and all time favorite of authentic Sri Lankan cuisine is always rice, coming in the form of red rice, white rice, fried rice or even milk rice. Named after this important member of the buffet item, the main meal of a typical Sri Lankan family is referred to as ‘Rice and Curry’. This is inclusive of rice as the main dish and several vegetable or meat dishes prepared with thin gravy to accompany it. Most famous is the dhal curry, which is also a permanent member of the meal plan. When it comes to spices and condiments, Sri Lankan cooks are rather generous, making the food strongly flavored and more suitable for the spicy eaters. Many spices like cinnamon and black pepper are originally grown in Sri Lanka and exported worldwide. A special side dish made of scraped coconut and red chili, known as ‘Pol Sambal’ is also very common in all parts of the country. As much as they love spice, Sri Lankans are known to have a sweet tooth when it comes to desserts and sweet courses.
